Pan fried wood pigeon breast, creamy parsnip pureé,

raspberry balsamic reduction.

Over night slow roasted sirloin of Scotch beef, Yorkshire pudding,

duck  fat roast potatoes, & all the trimmings.

Roast leg of local lamb, again with all the trimmings, even a yorkie pud…

Pigeon wellington. Pigeon breast, chicken liver parfait and red onion jam, wrapped in fumée bacon and short crust pastry,  fat roast potatoes and rich game  gravy.

Pan fried chicken breast with tarragon & mushroom sauce, charlotte potatoes .

Crisp fillet of sea bass on butter mashed potato, saffron cream sauce.

Duo of Joseph Morris sausages on creamy mash with rich onion gravy.
