Medallions of beef fillet, dauphinoise potatoes, rich beef stock gravy.

Slow braised shoulder of lamb, bubble & squeak croquette  & rosemary, mint gravy.

Galantine of stuffed game ~ partridge, pheasant & pigeon, wrapped in fumée bacon,roast potatoes & juniper berry gravy.

            Roast breast of turkey, cranberry & chestnut stuffing,

stock gravy & goose fat roast potatoes.

Spiced monkfish tail, braised puy lentils, curried aubergine purée.

tomato, aubergine & red onion ratatouille.
