3 bird galantine. Partridge, Pheasant & pigeon, chestnut & cranberry stuffing, wrapped in smoked bacon with goose fat roast potatoes & juniper berry game gravy..

Pan fried sea bass on crushed potatoes with a coriander & vanilla sauce.

Slow braised shoulder of lamb, colcannon croquet & rosemary red currant gravy.
